Chicken Kabsa: Arabian Style Chicken And Rice Recipe

About Chicken Kabsa: It is considered as the national dish of Saudi Arabia. It is also known by the name ‘makbus’. This spiced and flavourful grilled chicken and boiled rice is an exceptional choice for any special occasion. It is often served with fried almonds, raisins, parsley and yogurt sauce.

Ingredients Of Chicken Kabsa : Arabian Style Chicken And Rice

1/4 tsp Cardamom
1/2 tsp Cinnamon
1/2 tsp White Pepper
2 tbsp Lemon Juice
1/4 cup Butter
2 small Onion (finely chopped)
(4 cloves) Garlic
500 gram Chicken
1 cup Tomato Puree
1 small Tomato (chopped)
2 small Carrots (grated)
2 (whole) Cloves
1/4 tsp Cumin
1/4 A pinch of Coriander Powder
1/4 A pinch of Black Pepper
2 cups Basmati Rice
1/4 cup Raisins
1/4 cup Toasted almonds
to taste salt

How to Make Chicken Kabsa : Arabian Style Chicken And Rice

1.Mix together all the spices in a bowl and set the spice mix aside.
2.Melt the butter in a large stock pot or oven on medium heat. Stir in garlic and onion, until onion softens.
3.Add chicken pieces and brown them on medium heat until lightly browned.
4.Mix, tomato pure, grated carrot, cloves, cumin, coriander, salt, black pepper and kabsa mix. Cook for 3 minutes.
5.Pour the mixture in the pan, let it simmer and cover the pot. Add chicken and simmer it for 20 minutes.
6.Gently stir in the rice and cover the rice until rice is tender and almost dry. Cook for about 25 minutes.
7.Transfer the rice into a plate and put chicken kabsa curry on the top and sprinkle toasted crushed almonds.

RECIPE NOTES

Don't rinse or soak the rice before using it.
