A delicious blend of coconut and chicken, Coconut Chicken Curry is a South Indian recipe served as a main dish. Try this lunch/dinner recipe which is ideal for any party.
Ingredients of Coconut Chicken Curry
4 washed & dried chicken drumsticks
1 clove minced garlic
2 teaspoon curry powder
1/4 teaspoon Red chilli powder
250 ml Coconut milk
2 tablespoon finely chopped coriander leaves
2 pinches salt
1 small sliced onion
1/2 inch minced,peeled ginger
1/2 teaspoon cumin powder
200 gm chopped tomato
1/2 cup peas
1/2 cup Refined oil
How to make Coconut Chicken Curry
Step 1
Sprinkle little salt on the chicken and place them on a plate.
Step 2
Heat little oil in a nonstick pan over medium flame. Fry the chicken pieces, in batches, till browned evenly (about 5 minutes). Remove and transfer to a plate.
Step 3
Add onion, garlic and ginger to the pan. Stir-fry for 2 minutes. Add the cumin powder, red chilli powder, curry powder and little salt. Cook for 20 to 30 seconds.
Step 4
Add the tomatoes and the coconut milk. Mix well and gently bring to a boil.
Step 5
Add the chicken pieces to the pan. Reduce flame and simmer for 30 to 40 minutes. Add the peas and coriander leaves.
Step 6
Cook for another 5 minutes or until the peas become tender.

Switch off the flame and transfer to a serving bowl. Serve hot with rice or p
