Follow these steps to make it:
Step 1
Preheat oven to 180C/160C fan-forced. Line 2 large baking trays with baking paper.
Step 2
Place kale in a food processor. Process until very finely chopped.
Step 3
Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat to combine.
Step 4
Sift flour, cocoa, salt and bicarbonate of soda over butter mixture. Stir until just combined. Add kale and 2/3 of the chocolate. Using hands, knead dough in the bowl until well combined.
Step 5
Using 1 tablespoon of mixture at a time, roll mixture into balls. Place balls, 5cm apart, on prepared trays. Using the heel of your hand, flatten balls slightly. Press remaining chocolate into tops of rounds.
Step 6
Bake, swapping trays after 8 minutes, for 12 minutes or until just firm. Stand on trays for 5 minutes. Transfer to a wire rack to cool completely. Serve.
