Method of making mustard greens - Clean mustard, spinach and bathua leaves and wash them thoroughly twice with clean water and place them in a sieve, or place them on a plate and keep them slanted so that water is drained out of them. Now cut the leaves thickly and put them in the cooker, add a cup of water and keep boiling. After a whistle of the cooker comes, turn off the gas and let the pressure finish. Now grind tomatoes, green chillies and ginger finely with a mixer. Then add oil to the pan and heat. Add 2 teaspoons of oil and fry the corn flour until light brown and remove in a cup. Now heat the remaining oil in a pan, add asafoetida and cumin seeds to the hot oil. Now after roasting asafoetida and cumin seeds, add turmeric powder, tomato paste and red chillies and fry the spices till the masala oil is released.
(You can also fry chopped onions and garlic if you like) Then remove the mustard leaves from the cooker, cool, and grind in a mixer. Now add ground mustard leaves, water, roasted corn flour and salt to the roasted spices and mix well with a spoon. Now let the vegetable cook on a slow flame for 5-6 minutes after boiling. Your mustard vegetable is ready. Then remove the sarson da saag in a bowl and add butter or ghee from the top. Hot mustard greens are ready.
