Ingredients for making gravy gilki sabzi-
Gilaki / Nenua - 1/2 Kg
Asafoetida - 1 pinch
Cumin - 1/2 tsp
Onion - 1 (finely chopped)
Tomato - 1 (finely chopped)
Green chili - 1 (finely chopped)
Garlic - 4-5 cloves (finely chopped)
Ginger - 1/2 inch (finely chopped)
Turmeric - 1/4 tsp
Salt - 1/2 tsp
Red chili powder - 1/2 tsp
Coriander Powder - 1 tsp
Lemon juice - 1/2 tsp
Green Coriander - 2 tbsp (finely chopped)
Oil - 2 tbsp
Water - 3/4 cup
Method of making Gilki ki sabzi- To make Gilki ki sabzi, first peel off the peel of gilki and wash it with water and cut it into round or long and thin slices as per your choice. After this, put the chopped Gilki in a large bowl. Now add 1/4 tsp turmeric, 1/2 tsp salt and 1/2 tsp red chili powder and mix everything well, and keep it aside for 10 minutes. Apart from this, peel the peel of the onion, wash it with water and chop it finely. Now wash tomatoes, green chilies, garlic, ginger, green coriander with water and finely chop them, and now heat a cooker by placing it on the gas. After this, put 2 tablespoons of oil in a hot cooker and heat the oil as well.
Now put cumin and asafetida in hot oil and make cumin seeds red. Now add onion and fry it for 2 minutes, and when the color of onion becomes light pink, then add ginger-garlic and green chili and fry for 1 to 2 more minutes so that the rawness of ginger-garlic comes out. After this, add a pinch of turmeric, coriander powder and a little red chili powder and fry for 30 seconds to 1 minute. Then add tomatoes and fry for 2 to 4 minutes or till the tomatoes become soft. Now add Gilki and a little salt and fry for 3 to 5 minutes.
When the gilki is fried well with spices and oil, then cover the cooker with the lid and make 3 to 5 whistles. Switch off the gas after about 5 whistles. Now after the pressure of the cooker is released, mix the vegetable and see if there is more gravy in the vegetable, then after cooking it for 2 to 3 minutes again on the gas, you dry the gravy according to your test, make it thin or thick. After that turn off the gas, and add lemon juice and mix it well. Finally garnish the Gilki ki sabzi with finely chopped coriander leaves.
