There are many people all over the world who love to eat cashew curry, but when it comes to making it at home, they cannot make it. If you are also included in this list, then today we are going to tell you how you can make cashew curry at home.

Ingredients for making Cashew Curry-

Cashew nuts cup
Green peas cup
Makhane 1½ cups
Onion 1 medium 125 grams
Green chili 1-2
1 inch piece of ginger
Tomatoes 2 medium / about 250 grams
Kasoori Fenugreek 1 tsp
Coriander Powder 2 tsp
Red chili powder tsp
Turmeric tsp
garam masala tsp
Sugar 1 tsp
Salt 1 tsp / as per taste
Ghee/oil 3 tbsp
cup fresh cream
water 1 cup
chopped coriander 1 tbsp

standing spices

bay leaf 2
cloves 4-6
green cardamom 4
2 pieces of cinnamon (½ inch wide and 1 inch long)

Method of making Cashew Curry: For this, first peel off the peel of onion and ginger and wash it. After that remove the stem of green chili and wash it. Now chop them coarsely and grind them finely in a blender. After this, wash the tomato and cut it into four pieces and then grind it in a blender. After this heat 2 tsp oil/ghee in a non-stick pan. Now roast cashews on medium heat till they turn pinkish-red. Keep the roasted cashews aside. After this again heat 1 tsp oil/ghee in a non-stick pan and now fry the makhanas in it till they become crisp and keep aside. Now once again heat about 2 tbsp oil/ghee in a non-stick kadhai and add all the standing spices (bay leaves, cloves, cardamom, and cinnamon) and sauté on a medium flame for about a minute. When the spices are roasted, a very fragrant aroma arises. After that add onion paste and fry till onions turn golden. It takes about 8 minutes. Now add coriander powder, red chili powder, turmeric powder, kasoori methi, and garam masala to the fried onions. Mix all the ingredients well.

Fry the spices well for about 1 minute. After that add tomato puree and fry till ghee leaves the edge. This process takes 3-5 minutes. Now add fresh cream to it and fry for a minute. After that add about 1 cup of water, sugar, and salt and boil the curry for 3-4. Now add green peas to it and cook for about 2 minutes. (If you want, you can use frozen peas which are already cooked but if you are adding fresh peas, then add it to the curry after boiling in hot water for 2 minutes.) Now add cashews and cashews that are already roasted in it. Add makhana and mix all the ingredients well. Cook for a minute and turn off the flame. Take cashew curry is ready. Now serve cashew curry garnished with chopped coriander leaves and raisins to make it majestic.
