This time, if you want to make something special for your sister-in-law, then you can try Navratan Pulao. This pulao is not only delicious but will double the happiness of the festival.
Ingredients for Navratan Pulao
To make Navratan Pulao, you will need the following ingredients:
- 15-20 raisins
- 10-12 cashews
- same number of almonds and pistachios
- 1 cup basmati rice
- 1-2 potatoes, chopped
- 1-2 carrots, chopped
- 1 cup cauliflower flakes
- 1/2 cup peas
- 100 gms Paneer (cottage cheese), grated
- 1 onion, chopped
- Juice of 1/2 lemon
- 2 teaspoons saffron (soaked in milk)
- salt to taste
- 1 tsp cumin seeds
- 1 piece of cinnamon
- 2-3 cloves
- 1 bay leaf
How to make Navratan Pulao
1. Soaking and cooking the rice
- firstly, soak basmati rice in water for 15-20 minutes.
- After soaking, wash the rice and put it in a pan.
- Add 1 tsp Desi Ghee in the pan and cook the rice till 90% done.
- Be careful that the rice does not overcook; turn off the gas after it is cooked.
2. Preparation of materials
- Heat 2 tbsp desi ghee or refined oil in a pan.
- Add cashews, almonds, and pistachios and fry for a few seconds.
- Now add raisins and fry them and take out all the dry fruits in a plate.
- Fry chopped potatoes and carrots in the same pan. Then add cauliflower and peas and fry for a few seconds.
- Remove the vegetables and keep them aside.
- Fry the onion and keep it aside and fry the paneer pieces till they turn light golden brown.
3. Cooking the Pulao
- Pour required amount of oil in the pan and add whole spices (cumin seeds, cinnamon, cloves, bay leaves) and fry them.
- Now add cooked rice and mix the fried vegetables also.
- Stir gently so that the rice does not break.
- Add toasted nuts, salt, and lemon juice.
- Add saffron milk and mix well.
- Finally, add layers of cheese pieces and roasted onions.
- Cover and steam for 5 minutes so that the rice is cooked completely.
4. Serving Navratan Pulao
- Your Navratan Pulao is ready. Serve it hot.
- Along with this you can also make cold raita, chole or paneer curry.
