Always favorite, this soup is the perfect to start any food. In this soya sauce based soup, the taste of ginger and garlic is very strong, with fresh herbs such as coriander and mint. 

How to make Manchow Soup: 

#For Vegetable Stock: 1/2 cup chopped cabbage, 1/2 cup chopped carrots, 1/4 cup chopped parsley, 2 tablespoons chopped green onion, 3 to 4 cauliflower flower leaves.

#For soup: 4 cups of Vegetable stock, 2 tablespoon oil, 1 table-spoon finely chopped garlic, 1 tablespoon finely chopped ginger, 1 t-spoon finely chopped green chillies, 2 tablespoons finely chopped cabbage, 2 tablespoons finely chopped cauliflower, 2 tablespoons finely chopped capsicum, 2 tablespoons finely chopped carrots, 2 tablespoons finely chopped tomatoes, 1 tablespoon finely chopped mint, 1/2 table-spoon finely chopped green, coriander 2 tablespoon cornflower, 1/2 cup water, salt to taste, 1 tablespoon soya sauce, 1/4 t-spoon black pepper powder.

#For topping: Fried noodles 

#Method: For Vegetable Stock Boil 6 cups of water in one deep pan, boil all the vegetables for 15-20 minutes on medium flame. Let the vegetables be cool down and take out the stock from the Vegetables. 

1. Heat oil over high flame in a bowl or pan and let the smoke out. 

2. Add garlic, ginger and green chillies and roast them for a few seconds on high flame. 

3. Put cabbage, cauliflower, capsicum, carrot, and roast them for 1-2 minutes on a high flame. 

4. Add tomato, mint, green coriander and mix well and roast for 1 minute on high flame.

5. Add the vegetable stock and mix well and stir in between, stir fry them for 2-3 minutes. 

6. Add salt, soy sauce, mix well and fry for 2 minutes. 

7. Mix well cornflour-water mixture and stir well for 2-3 minutes. 

8. Add black pepper powder and mix well. 

9. Serve immediately with fried noodles.
