Ingredients of Mixed Vegetable Poha

3 cup pressed rice

1 teaspoon black mustard seeds

1 chopped onion

1/2 cup peas

1 grated carrot

1/2 teaspoon powder turmeric

1 tablespoon raw peanuts

1 teaspoon cumin seeds

8 leaves curry leaves

1 chopped potato

1/2 cup chopped green beans

salt as required

1/2 teaspoon red chili powder

For Garnishing

1 teaspoon lemon juice

2 tablespoon chopped coriander leaves

How to make Mixed Vegetable Poha

Step 1

In a wok, add oil and heat on low flame. Quickly add cumin seeds and black mustard seeds in the kadhai and let them pop, and then add curry leaves. Saute for a few seconds.

Step 2

Afterwards, add peanuts and finely chopped onion in the kadhai and cook till the onions turn brown in colour.

Step 3

Now, add all the veggies excepting carrot in the kadhai - peas, finely chopped green beans, and potato and toss well. Cook for about two minutes and then add the grated carrot and mix well. Add salt, turmeric and red chilli powder and stir to mix all the veggies.

Step 4

Then double close the lid of the kadhai and let the vegetables cook on low flame for about 5-10 minutes.

Step 5

Quickly rinse the pressed rice or the chiwda in water and keep aside for 10-15 minutes.

Step 6

Open the lid of the kadhai and check if all the veggies are cooked, and then add the rinsed chiwda into the kadhai. Stir and mix well all the ingredients. Switch off the burner once tossed well. Pour the lemon juice in the Mix Vegetable Poha and garnish with coriander leaves. Serve.
