Ingredients
Heat ghee in a heavy-bottomed pan and once the ghee is hot enough, turn off the flame and add ice cubes. This will extract the impurities and only pure ghee will remain in the pan. You can also use cow ghee.
Beat the ghee and ice well until the texture turns foamy. Now add flour to the ghee and prepare the batter. Heat ghee in a heavy bottomed pan, place a circular mold, and start pouring the batter in the center, fry till it is golden brown.
For sugar syrup, heat water and sugar till the sugar dissolves completely. Add the fried Ghevar to the warm syrup and remove.
For Malai, heat milk, sugar, cardamom powder, and saffron and reduce to half. Allow the malai coating to settle down and thicken. Top the malai on the ghevar and garnish with chopped nuts and saffron strands.
