People of Bihar eat a lot of litti chokha but many people do not know how to make it. Often people hear about it but they don't know how to make it. Material for making litti chokha- 2 cups wheat flour, 1/2 tsp ajwain, 2 tbsp ghee, 3/4 tsp salt Material required for filling- 1 cup roasted gram 4 – 5 pcs of garlic buds, 1 finely chopped medium-sized onion, 1 powdered ginger, 2 – 3 finely chopped green chillies, 1/2 cup finely chopped coriander leaves, 1/2 tsp kalonji, 1 tbsp lemon juice, red chilli pickle or any other pickle, Salt to taste The material required for chokha- 2 medium-sized boiled potatoes, 1 large spherical eggplant 3 medium-sized tomatoes, 4 – 5 peeled garlic buds, 2 – 4 chopped green chillies, 1/2 crushed ginger, 2 medium-sized finely chopped onions, 1 tbsp finely chopped coriander leaves, 2 tsp mustard oil, Salt to taste Method of making litti chokha- First of all, filter the dough in a large pot and add celery and oil to it. Now add water to it. The dough should be soft. Thus wrap the kneaded dough in a wet cloth. Then grind the roasted chickpeas with black pepper, [if sattu is not available] take out this mixture in a bowl and add all the spices and powdered ginger, green chilli, green coriander, lemon juice. After that mix it well and if the mixture looks very dry, add 1 tsp oil and a few drops of water to it. Keep in mind that it should be crumbly. Now make a dough from the dough and now boil it in the shape of a small loaf of bread. After this, place 2 tsp of stuffing on the bellyed dough and now close it from all around. Then give it the shape of a ball. Now, these litti are ready for baking. Make other balls in the same way. Then bring the oven to 200 degrees and place all the balls in a baking dish and place them in the oven and bake for 30 -40 minutes. After that, fry the tomatoes and eggplant on a low flame on the oven or stove until it becomes soft. Now remove the eggplant peels. Now mix boiled potatoes, tomatoes and eggplant well with ginger.
