On this day, the devotees try to please God by offering them a variety of sweets and delicacies. On this day, Annakoot vegetable and Puri Prasad are definitely made in almost every household. Every type of vegetable found in this season can be used to make Annakoot vegetable. Let's know how to make Annakoot vegetable.

necessary ingredients-
Potatoes - 2
Brinjal - 2-3
Cauliflower - 1
Beans - 100 grams
Sagri - 100 grams
Carrot - 1
Radish - 1
Tinde - 2
Arabic - 1
Okra - 6 to 7
Parwal - 2 to 3
Capsicum - 1
Gourd - chopped
Raw Banana - 1
Pumpkin - small piece
Tomatoes - 4 to 5

Spices used for making Annakoot-
Ginger - 2 inch long piece
Green Chili - 2-3
Green Methi - a small chopped bowl
Oil - 3-4 tbsp
Asafoetida - 2-3 pinch
Cumin seeds - 1 teaspoon
Turmeric powder - a small spoon
Coriander Powder - 2 tsp
Red chili - 3/4 teaspoon
Mango powder - half a teaspoon (if you want)
Garam Masala - half - a teaspoon
Salt - 1/2 tsp (as per taste)
Coriander leaves - 100 grams (a cup of finely chopped)

Method of preparation

To make Annakoot, first wash all the vegetables thoroughly. After this, peel potatoes, brinjals, bananas and cut them into medium size. In this, cut the radish leaves finely. After this, chop green chilies, tomatoes cut into small size, grated ginger and green coriander. Now to make vegetable, heat oil in a large pan and add asafetida to it. After roasting cumin, add turmeric, coriander powder and after frying it a little, add green chili, ginger and fry this spice a little. Now put all the chopped vegetables in this spice, add salt and red chili and keep stirring the vegetable. Add about a cup of water to the vegetable and cover it and cook it till it boils on high gas first. After the boiling, let the vegetable cook on slow gas. After five minutes, shake the vegetable once again and let it cook on a low flame with a lid for 5 minutes. Once the vegetables are soft, add chopped tomatoes and cook them till they become soft. Add garam masala, mango powder and coriander to the vegetable. Your Tasty Annakoot is ready. You can serve it with whole or bread after offering it to God.
