Brinjal chutney making ingredients-
-4 cups (chopped in rectangular pieces) eggplant
-3 tbsp canola oil
-2 tsp onion seed
-2 tsp cumin seeds
-1/4 cup curry leaves
-1 1/2 cup tomatoes
-2 tsp red chilli powder
-2 tsp turmeric
-Salt to taste
-3/4 cup sugar
-1 cup vinegar

How to make brinjal chutney - To make brinjal chutney, first heat the canola oil and add onion seed and cumin seeds. Then, when it starts crackling, add tomatoes with curry leaves and fry for a minute. Now add red chillies, turmeric, salt and sugar and add brinjal and cook for 3 to 4 minutes. Now add vinegar and slow down the heat and cook for 2-3 minutes. Then run the chutney once and check the spices added to it and remove it from the heat and serve when it cools down.
