Ingredients for making jaggery kheer-
-Rice – 1 cup
-Milk – 2 litres
-Jaggery – 125 g
-Green Cardamom – 4
- Dried fruits (cashewnuts, almonds, pistachios) – 1 cup
- Chironji (Charoli) – 1 table spoon
-Saffron leaf – 1 pinch
-Ghee – 1 tsp
How to make jaggery kheer - To make jaggery kheer, first wash the rice thoroughly and melt it for 10 minutes. Now take a large deep bottomed vessel and add a teaspoon of ghee to it and place it on medium heat. When the ghee melts, slow down the heat and add cardamom, milk and half a cup of water and heat it. Now, when the milk starts boiling, add the already melted rice and cook on medium heat for about 20 minutes. Keep running the kheer with the help of a tablespoon so that the kheer does not stick to the pot. Now add chopped almonds, cashewnuts and chironji and let it cook for about 10 minutes. Now crush the jaggery well and add it to the kheer and mix well. Then cook the kheer on a high flame for about 2-3 minutes and turn off the gas. Take the tasty jaggery kheer and is ready. Now add pistachios and garnish and serve.
