Paratha or roti of Rajgira flour are made during the fast, but you can eat it anytime you want, you can also eat it every day. This flour is beneficial for health. With this you can serve potato vegetable, it would be a good combination.  So let's learn how to make it.


Rajgira flour - 1 cup
Cornflour - ½ tablespoon
Green chili - 2
Potatoes - 1 medium
Ginger paste - ½ tbsp
Coriander - 1 tbsp
Ghee - according to taste
Curd - 1 tbsp
Rock salt - as per taste

Method of preparation: To make Rajgira Paratha, first boil the potato and remove the skin and mash it. Also, finely chop the green chilies and green coriander. Now prepare the dough by kneading it, and for this, take Rajgire flour in a big bowl. Add ginger paste, green pepper, green coriander, mashed potatoes, and salt and mix it well by hand. Now add ghee and curd to this flour, mix it again by hand and knead the dough by adding water as per your taste. Keep in mind that if you add more water, the dough will become sticky, so always add a little water. Keep in mind that the dough should be very smooth. Now keep the dough aside covered for thirty minutes. After thirty minutes, take out this dough and make five to six similar balls. Now start rolling it with light hands. When this dough breaks from the edges at the time of rolling, then add it by hand and roll it into a 5-inch circle. Heat the pan on a medium flame and allow it to heat up. Carefully place the paratha on the hot pan so that it does not break. After a while, when the paratha gets roasted from the bottom, then flip it and roast it a little more. Now flip it over with ghee or oil. Bake it all over with a spatula and bake until it becomes brown. Add ghee or oil again and flip it over. Roast it the other way as well. Your Rajgira Paratha is ready, you can eat it with any chutney, curd or pickle of your choice.
