Ingredients for Eggless Mango Cake-
1 cup mango, cut into squares
*3/4 cup (180 grams) sugar
*1/2 cup (120 ml) oil
*1 tsp vinegar
*1/2 tsp yellow food color
*2 cups (80 grams) maida / plain flour
*1 tsp baking powder
*1/4 tsp baking soda
*1/4 tsp salt
*1/4 cup (60 ml) milk
To cook in cooker:
*salt or sand
How to make Eggless Mango Cake- Firstly, take 1 cup mango and 3/4 cup sugar in a blender. After this, make a paste of mango by dissolving the sugar completely. Now put the mango paste in a big bowl. After this, add 1/2 cup oil, 1 tsp vinegar and 1/2 tsp edible yellow color to it. Now with the help of a whisk, beat the mixture while mixing it well. After this, take a sieve and mix 2 cups all purpose flour, 1 teaspoon baking powder, 1/4 teaspoon baking soda and 1/4 teaspoon salt. Now sieve the flour well and take care that there are no knots. After this mix well in a cut and fold manner. Now add 1/4 cup milk and mix till the batter mixes well.
After this, put 1/2 cup of salt in the pressure cooker to make the cake and remove the gasket and whistle and put the lid. Let it heat up for 5 to 10 minutes. This makes it like a preheated oven. Now pour the cake batter into the cake mold (7 inches wide and 4 inches long). Put butter paper on the mold so that the cake does not stick. After this, tap the mold twice so that no air bubbles remain in the cake. Now place the cake pan in a pre-heated cooker and cover and cook on medium flame for 45 minutes. Apart from this, you can also preheat and bake at 180 degrees for 45 minutes. After this, insert a toothpick to see if the cake is completely cooked or not. When the cake cools down, remove it from the mould.
