If you are bored of eating plain rice every day, then today you will get Mexican fried rice. It's a bit hard to make but big tasty to eat. So let's know how to make Mexican fried rice.

Ingredients for making Mexican fried rice-
3 cups cooked rice
2 tbsp oil
1/2 cup thinly sliced onions
1/2 cup finely chopped tomatoes
1/2 cup thinly sliced capsicum
Salt, according to taste
1 cup chopped and boiled mixed vegetables (sweet corn, carrots and fennel)

To make a chilli-garlic paste- 
5 dry Kashmiri red chillies
4 to 5 garlic buds

Method of making Mexican fried rice- First of all, heat oil in a deep non-stick pan and add onion and fry it on a medium flame for 1 to 2 minutes. After this, add chilli-garlic paste, tomatoes and capsicum and fry it on a medium flame for 1 to 2 minutes. Now add salt and 2 tbsp water and fry it on a medium flame for 1 minute. After this, add mixed vegetables and 1 tbsp of water and mix well and cook it on a medium flame for 1 to 2 minutes, stirring in between. Now add rice and salt to it, mix well and cook it on a medium flame for 2 to 3 minutes, stirring occasionally. Get ready for Mexican fried rice.
