Material required
Semolina - 1 cup
Curd - 2 tablespoons
Baking soda - 1 teaspoon
Water - 1/2 cup
Salt-wise
Chopped Onion - 1/2 cup
Chopped Tomatoes - 1/2 cup
Oil for cooking - as required
Coriander leaves - few
Vegetables (optional)
Method of preparation: In a bowl, add semolina, yogurt, salt and water. Then mix it well and leave it like this for 2 hours. Now mix baking paste with baking soda and mix it well. Whisk it until the paste becomes fluffy. Then pour some oil on the non stick pan. Then using a large spoon, pour the uttapam paste on the pan. Make sure that you do not take too much batter if you want to make mini uttapam. Now add onion, tomato and other vegetables of your choice on top of uttapam. Also put coriander leaves on top. Cook from both sides. Pour a little oil on the edges of the uttapam until it becomes golden brown. Your tasty and healthy mini uttapam is ready. Serve with mint or coconut chutney.
