Potatoes - 1 large size
Rice Flour - 1/4 cup
Baking soda - 1/4 tsp
Salt - according to taste
Oil - to deep fry the dumplings

To make the spice
Cumin seeds - 1 tsp (crushed)
Whole coriander - 1 tsp (crushed)
Turmeric powder - 1/2 tsp
Chili Flax - 1 tsp
Garam Masala Powder - 1/2 tsp
Ajwain - 1/4 tsp
Heeng - 1 pinch
Amchur Powder - 1 tsp

Method –  To make it, first peel the potato and grind it from the medium side of the greater. Now after this, wash the grated potato with water two to three times well and let the potatoes remain in the water. Now make the spice after that. For this, in a bowl, add ajwain, crushed whole coriander, crushed cumin, asafoetida, garam masala powder, chilli phalanx, amchur powder and turmeric powder and mix the spices with a spoon and keep it on one side.

After that, put oil in embroidery to fry the pakoras and keep it warm up. During this time, as long as the oil is getting hot, you make a better for so many pakoras. Because the better should not be made first. For this, add spinach and besan to a bowl and mash it well, however, you do not need to add water to it, because the spinach contains water. Because of this, when you add besan and mix it well with the hand, it will become soft. After that, add onions to it and mix it without water. In this way, your better will be ready by becoming a sticky without water and now take the grated potato in your hand and squeeze out all its water and put it in the spinach. Now add the spices that you have made in it.

After that, add ginger-garlic paste, green chillies, salt and rice flour to taste and mix well. Now finally add baking soda and mix. Take your sticky is ready by becoming a better, in such a time, the oil will also be hot. When the dumplings are poured into the oil, keep the heat medium. Now after this, take a little bit of better in your hand give it a round shape and put it in the oil. Now during this time, make as many dumplings as you have in your embroidery at a time and put them in the oil in a similar way.

After this, fry the pakoras until it is well golden brown. At the same time, when the dumplings are fried, before removing them from the oil, fasten the flame and fry it on a high flame for a minute.
