Quick and easy - Healthy Night Dinners!!!

Why spend hours cooking a gourmet feast when a nutritious and delicious meal could be just a few minutes away. Skip that grumbling tummy and curb those hunger pangs. Need to make dinner in a flash, here are quick and easy dinners to help.

Tuna Wraps. Wraps are the quickest and the easiest of the lot. This is filled with tuna, homemade avocado-tahini sauce, lettuce, cucumber, and bell pepper. Crunchy and delicious!

Spaghetti with lemon, chilli and spinach. This takes about 15-20 minutes. Boil the spaghetti. In pan heat some oil; add some garlic and chilli and sauté. Add a bit of lemon zest and juice, wine and some cream and let it simmer. Stir in the spinach along with the sauce and add your spaghetti; combine well and add some grated parmesan

Quick Prawn fried rice. This is done in 20 minutes. Filled with veggies, some garlic prawns, fish sauce; add in your rice and garnish with spring onions.

Quick Roasted capsicum soup. This is delicious and healthy. Take some roasted capsicum and blend, add some chicken stock, cream, crushed garlic, some ricotta cheese and pepper. Puree these until smooth. Place in a sauce pan and simmer on medium heat. Then season with some salt and lemon juice. Serve with croutons.

Curry in a hurry. Curry needn't be a chore-like undertaking - here's a curry you can prepare in minutes. Heat oil in a pan, add the onions and sauté. Add crushed garlic, ginger, chilli, tomatoes, and a little water. Bring this to a boil. Add in your protein, and garam masala. Cook for 4-5 minutes. Add in yogurt and stir. Garnish with fresh coriander leaves. Serve with roti or rice.
