Material for making vegetable pulao-
1/2 cup basmati rice (long-grained rice)
1 medium onion, finely chopped
1 small tomato, finely chopped
1/4 cup green peas, fresh or frozen
3 tbsp finely chopped French beans
1/4 cup finely chopped carrots
1 small piece of sharp leaf
1 Inch long piece of cinnamon
2 cloves
1/4 tsp garam masala powder
1/8 tsp turmeric powder
1/2 tsp red chilli powder
2 tbsp finely chopped coriander leaves
2 tbsp oil
1 tsp ghee
1 cup of water
Salt to taste

Method of making vegetable pulao- For this, wash the rice and soak it in water for 15-20 minutes. Remove the excess water from the soaked rice. After this, heat ghee and oil together on a low flame in a pressure cooker (stainless steel cooker with a capacity of 2-3 litres). Add the sharp leaf, cinnamon, and cloves and saute for 30 seconds. Add the onion and fry it until it turns light brown, it will take about 2-minutes. Now add chopped tomatoes, green peas, French beans and carrots after this. After that, fry them for about two minutes. Now add soaked rice, garam masala powder, turmeric powder, red chilli powder and salt. After that, fry them for about two minutes. Now add 1 cup of water and mix well. Now after this you close the lid and let it cook on a medium flame until there are 2 whistles. Reduce the heat after one whistling and let it cook until another whistle blows. Turn off the gas. Now let the cooker cool down until the presser is over. Finally, open the lid and gently inflate the rice with a fork. Now take out the pulao in a bowl to serve and garnish it with fresh green coriander.
