Ingredients for making malai koftas-
*3 potatoes, boiled and mashed
*3/4 cup cheese, grated
*1 chilli, finely chopped
*2 tbsp coriander leaves, finely chopped
*1/4 tsp cumin powder
*1/2 tsp salt
*2 tbsp raisins
*2 tbsp cashews, chopped
*2 tbsp maida
*Oil, for frying

For onion-tomato puree:
*2 tbsp oil
*1 onion, chopped
*1 tsp ginger garlic paste
*2 tomatoes, chopped
*2 tbsp cashew nuts

For curry:
*1 tbsp butter
*2 tbsp oil
*1 tsp cumin seeds
*2 Cardamom
*1 sharp leaf
*1-inch cinnamon
*2 cloves
*1 tsp Kashmiri red chilli powder
*1/2 tsp turmeric
*3/4 tsp coriander powder
*1/4 tsp cumin powder
*1 tsp salt
*1/4 cup cream/cream
*1/2 cup of water
*1 tsp Kasuri fenugreek, crushed
*1/4 tsp garam masala

Method of making malai kofta- For this, first of all, take 3 potatoes and 3/4 cup cheese in a large bowl. Now add 1 chilli, 2 tbsp coriander, 1/4 tsp cumin powder and 1/2 tsp salt. After this, add 2 tablespoons of raisins and 2 tablespoons of cashews to the kofta for a crunchy taste. Now mix all of them well, so that all the spices are well mixed. After this, add 2 tablespoons of maida to it and prepare a soft dough by mixing well. Maida absorbs moisture and helps in preparing the dough. Now apply oil to the hands and make small ball-shaped koftas. After this, deep fry them in medium hot oil. Keep in mind that you keep running them intermittently so that the koftas become equally fried. Now fry the koftas until golden brown and crispy. After this, remove the prepared koftas and keep them separate.  

Curry for malai kofta: For this, first of all, heat 2 tablespoons of oil in a pan and add 1 onion, and 1 tbsp ginger garlic paste to it and fry lightly. Now fry until the colour of the onion changes slightly. Then add 2 tomatoes and cook. Now add 2 cashews and cook continuously until the tomatoes are completely soft. After this, cool it completely and put it in the blender. Now add water to it as per the need and blend and make a smooth paste. After this, filter it so that the seeds and peels come out of it. Keep in mind that keep filtering it until the smooth pure of tomato-onion is formed and then set it aside. Now heat 1 tablespoon butter and 2 tablespoons of oil in a large pan. After this, add 1 tsp cumin seeds, 2 cardamoms, 1 tasty leaf, 1-inch cinnamon, 2 cloves and saute lightly till the scent comes out of them.

Now keeping the heat slow, add 1 tsp chilli powder, 1/2 turmeric, 3/4 tsp coriander powder and 1/4 tsp cumin powder. After this, cook it until it smells from the spices. Now add the prepared onion tomato puree, and 1 tsp salt and mix well. Then cover it and cook until the mixture thickens and releases the oil. Now add 1/4 cup of cream to it and mix well on a low flame. After this, add 1/2 cup of water to it and mix well and adjust its viscosity. Now let this curry boil and add 1 tsp Kasuri fenugreek and 1/4 tsp garam masala and mix well. After this, put the curry in the pot of koftas and it's ready to eat.
