necessary ingredients -
2 cups basmati rice
1/4 milk
An onion, cut into length
One spoon garlic-ginger paste
One tablespoon pomegranate seeds
One tablespoon green grapes
Half apple, peeled and chopped
A bay leaf
A piece of cinnamon, crushed
2 tablespoons coriander powder
A spoonful of cumin powder
3 cloves
A cardamom
6 cashew nuts
6 almonds
6 pistachios, peeled
6 walnuts, peeled
8 raisins
A teaspoon saffron
10 mint leaves, chopped
A big sugar
Half teaspoon cumin seeds
2 tablespoons oil
A spoonful of ghee

For decoration
Coriander Leaves
dry fruits

Method - For this, first wash the rice and soak it in water for 10 minutes. Now put saffron in milk. Now after this, put some oil in the pan and heat it on the gas and put onions in it and fry till it becomes golden and take it out in the plate. Now put oil in the pan and heat it on the gas and fry it on medium flame by adding cumin, bay leaves, cinnamon, cardamom and cloves. After this, when the cumin starts to crackle, add cashews, almonds, walnuts, pistachios and raisins to it and cook on low flame for one minute. Now add garlic-ginger paste, coriander, cumin powder and sugar to the pan and mix and cook for a minute. After this, turn off the gas. Then put rice in the cooker with water as required and keep it cooking on the gas. Now put fried onions, saffron soaked in milk, mint leaves, fried spices and dry fruits mixture and cover it. After a whistle in the cooker, reduce the flame. Turn off the gas when the second whistle comes. Now after the pressure of the cooker is over, open its lid and add pomegranate, grapes and apples to the casserole and mix. Zafrani Pulav is ready. Serve it with coriander leaves and dry fruits.
