250 g carrots
1 tsp cumin seeds

1-2 green chillies, finely chopped
1 tsp ginger, finely chopped
1 tsp salt
1/4 tsp red chilli powder
11/2 tsp crushed coriander leaves
1/2 tsp amchur. sourness
1/4 tsp garam masala
11/2 tbsp oil

Method of making carrot fenugreek vegetables - Remove the thick fenugreek stalks and wash the fenugreek leaves very well. Now leave it on the sieve for 5 minutes so that their excess water is released. Now, after this, cut this fenugreek. After that, wash the carrot thoroughly. If necessary, remove the outer skin and now cut it into small pieces. After this, heat the oil in a pan on a medium flame. At the same time, when the oil is hot, add cumin seeds to it and fry for a few seconds and then add asafoetida. During this time, slow down the heat and add green chillies and finely chopped ginger. Now fry it for a few seconds.

Then add chopped fenugreek to it and fry it on a medium flame for two minutes. Then add the carrot pieces and mix it well with fenugreek. Now fry the carrot fenugreek on a medium flame for a minute. Then add salt, red chillies, and powdered coriander to the carrot fenugreek. Mix all the ingredients well. Now cover and cook until the carrot melts. It takes about 5 minutes to do this. Now when the carrot melts, add garam masala and amchur powder and fry the vegetable for two minutes. Then turn off the flame.
