1 tbsp fenugreek seeds
1/4 cup mustard oil
salt to taste

How to make a crispy carrot-capsicum pickle- First cut carrots and capsicum into the desired shape. Now add mustard seeds, fenugreek seeds, kalonji, asafoetida, red chilli powder and salt to the grinder jar and make a powder. Now add carrots, capsicum and ground masala to a bowl and mix well. Then add oil to the microwave-safe bowl and place it in the microwave for 2 minutes. Now add hot oil to carrot and capsicum and mix well. Then close the lid of the bowl and place it in the microwave for 30 seconds. Take carrot-capsicum pickle ready. Now store it in an airtight container and eat it whenever you want.
