250 grams Pindi Chole

1 tbsp tea leaves

1 tbsp cloves

3-4 cinnamon

5-6 Green Cardamom

5-6 large cardamom

5-6 ginger

2-3 bay leaves

2-3 green chilies

1 tsp turmeric

1 tsp mango powder

1 tsp Kasuri Methi

2 tablespoons celery

4-5 garlic cloves

1 tbsp tamarind water

Black salt and ordinary salt

1 tsp red chilli powder

1 tsp coriander powder

1 tsp cumin powder

1 tsp pomegranate powder

Method of preparation

Soak chickpeas (Chole) overnight. Take a clean cloth, add tea leaves, cinnamon, big and small cardamom, bay leaves and make bundles. In a pan, add soaked chickpeas and boiled spices, salt and water, and boil for 1 hour. When the chickpeas boil, add turmeric, coriander powder, cumin powder, red chili powder, pomegranate, mango powder and kasoori. Add fenugreek and mix well. Now keep them aside. Heat oil in a pan, add celery, ginger, garlic and green chillies and fry it. Now pour this tempering on the chickpeas. Add water, a pinch of black salt, simple salt and one table spoon of tamarind water and cook on medium flame. When the chickpeas are cooked, garnish with green coriander and serve your family with hot roti or rice.
