  • 3 to 4 ice cubes
  • 4 cups water
  • 1/2 cup milk
  • a little flour
  • 1/4 tsp yellow food colour
  • 1 cup sugar
  • 1 cup water (for syrup)
  • 1 tsp cardamom powder (for topping)
  • 1 tbsp pistachios and almonds (chopped)
  • sugar for syrup

Method for making Ghevar

  1. Prepare the mixture of ghee and ice: First of all, take frozen ghee in a large bowl and add an ice cube to it. Now mix it well. If needed, you can add more ice cubes. Mix the ghee until it turns white.

  2. Mixture of refined flour and flour: Now add some refined flour to this ghee and mix it well. After this, prepare a thin mixture by mixing flour, milk and water in it. Add a few drops of lemon to it, which will enhance its taste even more.

  3. Make Ghevar: Heat ghee in a small pan. When the ghee is well heated, then pour this mixture in the pan by rotating it in a circular shape with the help of a spoon. When the color of Ghevar starts becoming light brown and small holes start appearing in it, then take it out from the pan.

  4. Prepare syrup: Prepare syrup by adding water and sugar in a pan. If you want, you can also add yellow food color to it. After this, take syrup in a bowl and put the prepared Ghevar in it, so that the Ghevar is completely immersed in the syrup.

  5. Preparation of Malai: Now prepare a paste by mixing 1/2 cup milk powder, 1/2 cup fresh cream or malai, 1/4 cup sugar, 1 cup milk, chopped nuts and 1/4 tsp cardamom powder. Spread this paste evenly over the Ghevar.

  6. Ready to serve: Here, delicious Malai Ghevar is ready. Take it out in a plate and garnish it with chopped pistachios and almonds.
