Baking soda and baking powder are two different substances used in baking to create gas and make the batter rise.

Baking soda (sodium bicarbonate) is an alkaline substance that reacts with acids to form carbon dioxide gas. Baking powder also contains acid and dry acid along with baking soda.

1. Main differences:

aspect Baking soda baking powder
Nature alkaline acidic
Constituent sodium bicarbonate sodium bicarbonate, acid, dry acid
feedback reacts with acid to form CO2 gas Reacts with wet ingredients to form CO2 gas
Use With sour ingredients (curd, buttermilk) With moist ingredients (cakes, muffins)
Taste Bitter neutral
Power more than baking powder less than baking soda

2. Identification:

  • Taste: Baking soda has a bitter taste, while baking powder has a neutral taste.
  • Reaction: Mixing baking soda with vinegar or lemon juice creates a foam, whereas baking powder already contains acid, so it will react with the wet ingredients.
  • Appearance: Baking soda is coarse, while baking powder is smooth and soft.

3. Usage:

  • Baking Soda: It is used with sour ingredients (curd, buttermilk). It can also be used in salty dishes.
  • Baking Powder: It is used with moist ingredients (cakes, muffins).

4. Precautions:

  • When using baking soda, use only the amount specified in the recipe. Using too much may cause the dish to taste bitter.
  • When using baking powder, use fresh baking powder. Old baking powder may lose its effectiveness.

5. Option:

  • If you don't have baking soda, you can mix 1/4 teaspoon baking powder with 1/4 teaspoon vinegar or lemon juice to equal 1/2 teaspoon baking soda.
  • If you don't have baking powder, you can mix 1/2 teaspoon baking soda with 1/2 teaspoon cream of tartar to equal 1 teaspoon baking powder.

Baking soda and baking powder are both useful baking ingredients. Using the right ingredients plays an important role in making your dish tasty and fluffy.
